Mollie’s expands into Scotland with new Edinburgh Park motel and diner

Mollie’s, the innovative budget-luxe motel and diner brand, is set to make its Scottish debut with a brand-new site at Edinburgh Park. This move marks a pivotal step in Mollie’s UK expansion, following the successful exchange of contracts with acclaimed developers Parabola.

The new venue, due to open in 2028 pending planning and licensing approval, will be strategically positioned near Edinburgh Park Station.

This new property will be Mollie’s fourth, joining current locations in Bristol and Oxfordshire, plus a forthcoming Manchester city centre site.

The Edinburgh hotel will cater to local residents, business travellers, and tourists alike, benefiting from excellent transport links – including access to the M8, Edinburgh City Bypass, extensive bus and cycling networks, and direct routes to both the city centre and airport in under 20 minutes.

Being part of Parabola’s broader transformation of Edinburgh Park, a district aiming to blend business, living, and leisure, Mollie’s supports the shift detailed in the City Plan 2030.

The area is evolving from a primarily business-focused zone to a lively, mixed-use community with ambitions for high-density, well-connected sustainability.
