Lannan to host pastry star Philip Khoury for Edinburgh pop-up

Lannan, the acclaimed Stockbridge bakery founded by Darcie Maher, will welcome world-renowned pastry chef and author Philip Khoury for a special one-day pop-up on Sunday 5th October.

The event coincides with the release of Khoury’s highly anticipated second book, Beyond Baking, and will see an array of his plant-based creations on offer from 9am until sell-out. Guests visiting the bakery will also have the chance to purchase copies of the new book as well as Khoury’s limited-edition Matcha and Pistachio Chocolate bars, which previously sold out within minutes of release.

Among the treats on the counter will be:

  • Peanut Butter Chocolate Chip Cookies
  • Anzac Cookies
  • Pure Pistachio Tart
  • Muscovado Tart
  • Pain au Chocolat

Lannan, which opened in July 2023, quickly gained recognition for Maher’s signature range of viennoiserie, custard slices, pains suisses and cardamom buns, as well as her inventive specials showcasing seasonal produce. In 2024 the bakery was awarded Pastry Opening of the Year by respected international guide La Liste.

Philip Khoury is regarded as a pioneer of plant-based pastry and a leading figure in modern patisserie. Formerly Head Pastry Chef at Harrods, he oversaw one of the largest pastry operations in the world while also building his reputation for creativity and technical precision.

His career includes time at Sydney’s Quay restaurant, work with Australian pâtissier Adriano Zumbo, and appearances on British television, cementing his profile as a trusted culinary voice.

Khoury is also the founder of artisan chocolate studio Khourys, producing small-batch confections inspired by global cities. His debut book, A New Way to Bake, received the 2024 Fortnum & Mason Best Debut Cookery Book Award as well as the German Cook Book Prize for Best Baking Book. He went on to receive the La Liste Pastry Award for Innovation in Paris in 2023.

His latest title, Beyond Baking, will be published by Quadrille on Thursday 2nd October 2025.
