The Palmerston launches Asian-inspired Sunday series

The Palmerston in Edinburgh is set to celebrate festival season this August with a trio of one-off Sunday dinner takeovers, welcoming leading chef talents from across Edinburgh and Glasgow. The Sunday Series will spotlight bold, Asian-inspired menus across three dates – 16, 23 and 30 August – each shaped by the guest chefs’ heritage and the best of seasonal Scottish produce.

Kicking off the series on 16th August is Ghar, the progressive Indian dining project from Bombay-born chef Yash Rajpal. Taking inspiration from the vibrant street food culture of Delhi’s old town, Rajpal will present Chandni Chowk Club, a four-course sharing menu rooted in Indian culinary traditions while embracing local, seasonal ingredients.

Dishes will include citrus cured fish with green chilli, coriander, lime, gooseberry and red onion; aloo tikki chaat with tangy chutneys and spiced yoghurt; and a rich Delhi butter chicken served with fresh breads. Dessert comes in the form of kesar mango kulfi with raspberry and pistachio, offering a bright, fragrant finish.

On 23rd August, Glasgow sisters Fariya and Sahar Sharif – the duo behind Parveen’s – will bring a menu inspired by their Pakistani heritage. Known for their bold, soulful cooking, the pair will blend traditional flavours with Scottish produce ahead of opening their first permanent neighbourhood restaurant in Glasgow’s Southside.

Their menu will feature dishes such as charred corn and coconut sundal with papad; hispi cabbage thoran with cashew makhani and buckwheat crisp; and mango salsa fried potatoes alongside saffron and fennel pilau rice. To finish, a Hunza apricot granita with pistachio crème offers a refreshing close. The upcoming restaurant aims to reflect both their Pakistani and Scottish identities, creating a welcoming space rooted in community and shared food experiences.

The series concludes on 30th August with a Thai feast from Tida Bradshaw of Moo Noi. The pop-up concept – named after Bradshaw’s childhood nickname meaning ‘little pig’ – explores her Thai heritage through dishes that marry Scottish produce with the bold, herbal flavours of Northern Thailand.

Her menu will include sai ua, a grilled Northern Thai sausage packed with herbs and served with cooling vegetables; som tam sa-got-laen, a vibrant salad of Scottish kohlrabi, cucumber and shrimp; and a light, playful dessert of Thai jelly and ice cream.

Throughout the series, The Palmerston will complement each menu with bespoke cocktails inspired by the guest chefs’ cuisines, alongside a series of specially curated wine lists. For each dinner, the restaurant will also open up its cellar to offer rare and unusual bottles at exceptional prices, available for one night only.
