FOUNDER and director of Highland Boundary Distillery Dr Marian Bruce has been honoured in a line up of Scotland’s best and brightest in Scottish culture in 2023.  The List Magazine Hot 100 Awards recognised the boutique Perthshire distillery as one of Scotland’s most sustainable –https://list.co.uk/news/44356/the-list-hot-100-2023

Highland Boundary was recognised for their sustainability and their latest innovative release, the first Wild Scottish Cocktail Bitters. Highland Boundary is Scotland’s only botanical spirits distillery creates, unique spirits and liqueurs and now bitters, using only sustainably harvested wild Scottish plants.  The multi-award winning distillery aims to re-connect people with the lost culture and flavour of Scotland’s wild plants. Highland Boundary are wild flavour innovators, reviving and modernising ancient distilling traditions and the cultural use of Scotland’s native plants in spirits.  Their unique and diverse production methods are rigorously and scientifically developed to extract the maximum flavour from our native flora.

The bitters recipe has been seven years in development with each botanical ingredient being individually prepared using specific maturation conditions. Marian Bruce says: “We work individually with each wild plant to determine the conditions to extract the best flavour, then we combine them to achieve the final recipe that brings an aromatic bitterness essential to cocktails and which also enhances the flavours of the other cocktail ingredients.” 

Commenting on the award Marian Bruce said “We are delighted that our wildly different distillery has been nominated by The List – it is proud moment for all of our staff who work so hard to bring wild flavour innovation and a nature-positive business ethos to Scotland”.
