Edinburgh’s Vault City Brewery is set to tantalise taste buds across the UK with its latest creation, ‘Cereal Spooner’, a unique ‘cereal milk’ beer.

Crafted with fresh strawberries and raspberries, this “outrageously creamy, milky” beverage seeks to capture the essence of the “sweet milk at the bottom of your cereal bowl”.

The concept of ‘cereal milk’ was popularised by Christina Tosi, chef and founder of Milk Bar in the United States, who pioneered the idea of infusing milk with cereal flavours to create a delectable treat.

Inspired by this trend, Vault City‘s brewers in Portobello developed Cereal Spooner.

Steven Smith-Hay, co-founder of Vault City, said: “The words ‘sour’ and ‘milk’ don’t often go well together, but we’ve taken inspiration from the sweet milk at the bottom of your bowl for our latest release.

“Paired with fresh Scottish strawberries and raspberries, with an outrageously creamy, milky mouthfeel – this is nostalgia by the bowlful.”

Cereal Spooner is part of a quartet of new flavours that debuted on 6 August.

Vault City is known for its innovative and accessible beverages, such as Strawberry Banana Milkshake, Raspberry Blueberry Bubblegum, Jaffa Cakes, and Iron Brew. It is poised to add another hit to its collection.

This launch comes during a year of significant expansion for Vault City, led by Steven Smith-Hay. The company recently acquired a new brewery capable of producing over 10 million litres of beer annually.

This growth has been bolstered by recruiting industry veterans Luca Lorenzoni and Martin Monro, who have contributed to the success of brands like Anheuser-Busch InBev and Camden Town Brewery.

Martin Monro commented, “Vault City has established itself as a leader within its space, and that allows us to become really creative when it comes to flavour.”

Vault City exports to over 20 countries and is stocked in more than 250 bars and major UK supermarkets, including Tesco, Morrisons, Sainsbury’s, and Waitrose.

The brewery also garnered national attention by becoming the first UK brewer to adopt a four-day working week and by committing to pay staff the London Living Wage of £13.15 per hour, surpassing the Real Living Wage of £12 per hour.
