Edinburgh hospitality group Encore Bars has announced plans to open its new flagship venue, The Lyon Public House, following a £1.5 million investment.
The venue, located on George Street, is set to open this August and will introduce a modern take on the traditional public house concept.
Designed around food, drinks and social experiences, The Lyon Public House will transform throughout the day, moving from a food-led environment into a lively late-night destination.
Food will be at the heart of the venue’s offering, with a dedicated in-house bakery and pastry team introduced alongside a menu focused on elevated pub classics.

The Lyon will feature a strong pie-led offering, including a late-night pie shop window serving until 3am, alongside a Sunday roast menu.
The venue will include a range of distinct spaces, including a glass-fronted indoor and outdoor courtyard designed to bring the atmosphere of George Street into the building.
The layout will feature multiple areas offering different experiences, including a private space for dining, events and viewing parties, as well as a large bar area with long high-top tables inspired by traditional Bier Halles.
Located within a building that operated as an auction house for more than a century, The Lyon Public House will take inspiration from its heritage through curated antiques, interior details and elements of theatre throughout the venue.
Live entertainment will also form a central part of the concept, with a rotating programme of performers across multiple spaces.
This will include a duelling pianos experience, bringing an interactive element designed to build energy throughout the evening.

The drinks menu will feature 18 draught world beers, including rotating collaborations with independent brewers, alongside a curated wine list and bespoke cocktails suited to both daytime and late-night occasions.
