The Highland Liquor Company from Ullapool, Ross-shire, a recent winner of the Distilling Product of the Year – White Spirits category in the Scotland Food & Drink Excellence Awards 2024, had the honour of being the spirits serve at the Monday’s Michelin Guide Great Britain & Ireland Awards 2025 (Monday 10th February).

On the night over 400 assembled guests including the UK’s leading chefs, restaurateurs, as well as journalists, influencers, partners, and industry leaders had the opportunity to enjoy the Distillery’s Seven Crofts Fisherman’s Strength Gin, as the newly awarded Bid Gourmands, Michelin Stars, Michelin Green Stars and Michelin Special Awards were revealed to the assembled guests at the ceremony held at Kelvingrove Art Gallery & Museum, Glasgow.

Fisherman’s Strength, like all of the products produced by the artisan distillery is handcrafted by the Highland Liquor Co team at their distillery in Ullapool.

Founded by Helen Chalmers and Robert Hicks, The Highland Liquor Company has grown to create exceptional handmade award-winning spirits in its Northwest Highland home, including the recent addition of a Gold medal, won at the Bartenders Brand Awards (BBA’s) in March of this year and previously the Best New Launch Design at the World Gin Awards.

Robert created the distillery’s first gin Seven Crofts in 2019. This was later followed by Seven Crofts Fisherman’s Strength, a navy-strength gin, which launched in October 2020, becoming the second iteration in the Highland Liquor Co’s portfolio.

Bottled at 57%, this navy-strength gin is crafted in small batches and delivers a flavour profile that’s juniper-led, with notes of ripe blueberry, cracked black pepper, pink pepper, and a touch of spicy coriander with woody background notes.

Making it the perfect accompaniment to fish and seafood, ideally enjoyed in a martini or classic gin and tonic with a twist of orange.

Robert Hicks co-owner of the Highland Liquor Company said: “We can’t describe how thrilling it is for our small distillery team to have our Seven Crofts Fisherman’s Strength Gin be selected to represent the best our nation has to offer at the first-ever Michelin Guide UK & Ireland Awards event to be held In Scotland.

“We hand-craft each spirit from scratch in small batches using the finest quality ingredients.

“Provenance and collaboration are at the heart of what we are about, and our multi-award-winning spirits are a testament to our desire to create flavour-driven spirits that people can truly savour and enjoy.’’
