Start your day with a fiery kick by whipping up this delightful Mexican-inspired breakfast dish. This Huevos Rancheros recipe is sure to tantalise your taste buds and provide a hearty start to your morning.

Here’s how to create this flavourful feast in your own kitchen:

Ingredients (serves 2)

  • 4 small corn tortillas
  • 400g tin of black beans or pinto beans, drained and rinsed
  • 2 tbsp sunflower oil
  • 1 small onion, finely chopped
  • 1 jalapeño chilli, deseeded and finely sliced
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 3 medium tomatoes, finely chopped
  • Small bunch of fresh coriander, chopped
  • Juice of 1/2 lime, plus extra wedges for serving
  • 2 medium free-range eggs
  • 1 ripe avocado, sliced
  • 50g feta cheese, crumbled
  • Hot sauce (optional)

Method:

  1. First, prepare the zesty salsa ranchera. Heat 1 tbsp of oil in a frying pan over medium heat. Add the onion and jalapeño, cooking until softened (about 4 minutes).
  2. Stir in the cumin, oregano, and chopped tomatoes. Cook for 3 minutes until the mixture becomes saucy. Add half the chopped coriander and season with salt. Cover and simmer on low heat for 5 minutes, then season with lime juice.
  3. In a separate pan, warm the beans with a splash of water over low-medium heat. Mash until mostly smooth but still retaining some texture.
  4. In a clean frying pan, heat the remaining oil and briefly fry the tortillas on both sides until lightly toasted. Set aside on kitchen paper.
  5. Using the same pan, fry the eggs to your liking.
  6. To assemble, spread the mashed beans on each tortilla, followed by a generous spoonful of the salsa ranchera. Top with a fried egg, sliced avocado, crumbled feta, and the remaining coriander.
  7. Serve immediately with lime wedges and hot sauce on the side for those who fancy an extra kick.
