Ingredients (serves 2)
- 4 small corn tortillas
- 400g tin of black beans or pinto beans, drained and rinsed
- 2 tbsp sunflower oil
- 1 small onion, finely chopped
- 1 jalapeño chilli, deseeded and finely sliced
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 3 medium tomatoes, finely chopped
- Small bunch of fresh coriander, chopped
- Juice of 1/2 lime, plus extra wedges for serving
- 2 medium free-range eggs
- 1 ripe avocado, sliced
- 50g feta cheese, crumbled
- Hot sauce (optional)

Method:
- First, prepare the zesty salsa ranchera. Heat 1 tbsp of oil in a frying pan over medium heat. Add the onion and jalapeño, cooking until softened (about 4 minutes).
- Stir in the cumin, oregano, and chopped tomatoes. Cook for 3 minutes until the mixture becomes saucy. Add half the chopped coriander and season with salt. Cover and simmer on low heat for 5 minutes, then season with lime juice.
