Scottish Start-Up Fodilicious launches best-selling snacks in 100% recyclable packaging

AWARD-WINNING Scottish start-up, Fodilicious, has relaunched their bestselling snack range, Cookie Buttons, with a new improved recipe and 100% recyclable packaging – one of the first brands in the Scottish bakery industry to achieve this.

Lauren Leisk, Founder of Fodilicious started the business to help 1 in 5 people across the UK who suffer from Irritable Bowel Syndrome (IBS) following a low FODMAP diet like her, to find products suitable for their dietary requirements with a focus to create all natural, healthy, better-for-you products positioned in the fast growing “free-from” and gut health sector. 

Understanding the need to put sustainability at the forefront of the business, Lauren set out to explore the options available to improve their first initial prototype of snacks which was developed in 2021 during COVID-19. After trialling and testing various recipes and packaging solutions, the brand’s snack range re-launched in May 2023, and have been a huge success already, with fantastic feedback on the new packaging format and plastic packaging usage reduced by over 70%.

Lauren said: “We’ve made some exciting changes that make our Cookie Buttons range even more delicious and satisfying, whilst being better for the planet.  As a challenger brand in a fast-growing industry, it’s key to be ahead of the competition and continue to innovate. “Not only have we worked hard to reduce our plastic usage in our packaging, we had significant technical challenges in scaling up our existing recipes with the high-quality ingredients we use, not traditionally used within bakery products.  Due to an increase in demand for our low FODMAP, allergen free and plant-based snacks, we had to find a solution fast in order to be able to produce larger volumes of our products.

“We’re super excited to launch our new Cookie Buttons range, which are now in better shape (literally) than ever before! We use all natural, premium ingredients including cocoa butter, pure grade A maple syrup and Scottish gluten free oats in our snacks, baked in an allergen free, BRC accredited site in the Scotland. Our Cookie Buttons are also allergen free, vegan, plant-based, low calorie, and 100% natural.”

Lauren, a Business Management Honours graduate and current Post-graduate student of Queen Margaret University, Edinburgh, has said the university has been so supportive since starting Fodilicious, and is home to the Scottish Centre for Food Development and Innovation, providing technical support and advice to small businesses and students with innovative food and drink ideas.

Not only is the Scottish Centre for Food Development and Innovation a fantastic resource with a highly skilled technical team, there is also a dedicated “Business Innovation Zone” on campus, allowing you to work on your business and hot desk, as well as an on-site Business Gateway for first-hand advice.”

The new Cookie Buttons snack range joins their existing portfolio of products –Breakfast Granola and new Energy Infusion Waters which launched last year.  All of the products are the first in the UK of their kind to be low FODMAP certified for IBS, gluten free and free from allergens, 100% natural and vegan too – so everyone can enjoy.  

Having scooped up many awards, including Scottish EDGE – the UK’s largest start-up funding competition, as well as being part of the Scottish Government’s ‘Unlocking Ambition’ agenda for high growth businesses, Fodilicious is already exporting internationally, with key markets in the USA, Canada and Europe for their IBS friendly, plant-based and allergen free products.
