Skye’s Café Cùil prepares to toast to another winning season with new organic wine and cocktail offering

Contemporary Hebridean cafe to reopen from 11 March 2023

AFTER a standout first season, Café Cùil, a contemporary Hebridean brunch and lunch spot just a stone’s throw away from Skye’s magical Fairy Pools, is to reopen its doors for the season on 11 March 2023 with some exciting additions to its menu.

The café, headed up by Clare Coghill, the Island’s youngest hospitality owner (and one of the Skye’s only female restaurant owners) is expanding its offering with a new Highland-inspired drinks selection featuring organic wines and cocktails to accompany a Spring menu focusing on seasonal Scottish produce and fermented, gut healthy ingredients.

2022 saw Café Cùil make a triumphant return to Coghill’s native Skye following a stint in Dalston, wowing diners with its laid-back but ambitious contemporary menu, bringing a slice of London’s sophisticated brunch scene to Skye. The show stopping fan favourite Lochalsh Beef Brisket Rarebit with Orkney cheddar will be making a return to the menu this season, alongside new dishes including: 

  • Highland Shakshuka: Baked Eggs With Skye Black Pudding, Slow Roasted Tomatoes & Cashew Pesto 
  • Scotch Pancakes With Rhubarb Crumble & Whipped Mascarpone 
  • Poached Eggs With Scottish Mozzarella, Bogrow Farm Prosciutto & Dill 
  • Skye Smokehouse Trout With Spring Barley Tabbouleh, Cùil Kraut And Soft Boiled Egg.

For the first time, Café Cùil diners will also be able to choose from a new organic wine and cocktail menu, designed by Coghill to perfectly accompany her dishes instilling local tastes of the Highlands. Cocktails to include: 

  • Bloody ‘Mairi’ with housemade pickles; 
  • Raasay Gin with meadowsweet & rosemary;
  • Caora Dubh coffee martini with hazelnut, with wine supplied by L’Art Du Vin. 

Owner and Head Chef of Café Cùil Clare Coghill said of the season reopening: “The reception to Café Cùil’s first season on my home turf was so great. I feel passionately about elevating what diners think they can expect from a café, with sophisticated, yet laid-back dishes inspired by local produce. I’m really looking forward to sharing our new drinks selection and pairing them with our new dishes. It’s going to be a great year!”

This year will also see the opening of a retail space within the premises selling local artists’ work, artisan food products and cookbooks. 

Nestled in the village of Carbost, Café Cùil’s home on the Isle of Skye attracts over 650,000 visitors to the island each year, falling for its spectacular rugged landscapes, glittering lochs and unrivalled food and drink scene. Travellers are increasingly looking for more “back-to-basics feel” and 55% of those surveyed by Booking.com yearning for “off-grid” style holidays to escape from reality – making Skye the perfect location for tourists and locals alike.
