The Chester Hotel launches The Gallery Bar and Restaurant following major investment

The Chester Hotel has unveiled its newest chapter with the opening of The Gallery Bar and Restaurant, the result of a significant six-figure investment which has transformed the west end hotel’s dining spaces.

Designed to be as visually striking as it is welcoming, The Gallery draws its inspiration from Scotland’s artistic heritage. Guests dine surrounded by one of the world’s largest private collections of John Byrne original artwork, complemented by works from a wide range of acclaimed contemporary Scottish artists. The result is a series of spaces that feel curated yet comfortable — a modern gallery where the art on the walls is as thought-provoking as the dishes on the table.

The rich interior palette blends bold patterned fabrics, intimate booths, statement lighting and contemporary textures to create a relaxed but sophisticated environment. Whether guests choose a private nook, a curved seating banquette for convivial dining, or a sociable seat at the bar, The Gallery is designed for both everyday indulgence and special occasions.

The launch also coincides with a new seasonal menu, balancing locally sourced ingredients with international influences. Signature highlights include:

  • Peterhead crab crumpets with chilli and lime – a refined take on a coastal favourite.
  • Hand-dived Orkney scallops with celeriac, pear and hazelnut.
  • Josper-grilled Chateaubriand for two, perfectly seared over charcoal.
  • A trio of Tandoori dishes — butter chicken, salmon, and paneer — served with pilaf rice, naan and dahl.
  • Lobster tagliatelle in a shellfish bisque.
  • Venison loin with savoy cabbage and beetroot.
  • Desserts including mango and passionfruit pavlova and an indulgent Kirsch-soaked Black Forest sundae.

Owners Graham and Gillian Wood are behind the elegant transformation. Graham said:

The Gallery Bar and Restaurant is open to residents and non-residents alike.
