Dean Banks at The Pompadour is set to host an exclusive culinary collaboration featuring two celebrated chefs. For three days only — 20, 21, and 22 February 2025— Dean Banks will welcome Dan Merriman to the venue and, together, the chefs will deliver an unforgettable dining experience.

Dan Merriman, 29, originally from Worcestershire, has been widely praised for his refined skills, creative flair and masterful execution that have earned him recognition as one of the most exciting young chefs in the UK today.

The event will showcase both chefs’ signature dishes, including Dean’s ‘Nanas Banoffee’ with tonka and sour caramel, and one of Dan’s standout creations, Castle Game venison with celeriac and miso apple. The menu will highlight their culinary creativity, refined techniques, and passion for exceptional ingredients.

Dean will also be showcasing his ambassadorship with Nespresso at the event, creating a petite four with his favourite vanilla coffee.

Guests can book to enjoy an exquisite 7-course lunch priced at £90 per person, or an indulgent 10-course dinner for £135 per person.

Chef Dean Banks, renowned for his innovative take on Scottish cuisine and use of sustainable local ingredients, commented: “It’s a privilege to collaborate with Dan Merriman, whose talent and dedication to his craft are truly inspiring. This exclusive event is set in the iconic Pompadour, located within Edinburgh’s Caledonian hotel. Known for its timeless elegance and rich culinary history, the venue provides the perfect stage for two of the UK’s most distinguished chefs to showcase their talents.

Spaces are extremely limited, with two out of three dates already sold out. Early booking is highly recommended to experience this unique collaboration.

Due to high demand, the two chefs will also be hosting a three-day culinary showcase event at Haar in St Andrews on the 20, 21 and 22 March 2025.
