Cardinal to host one-day Mexican brunch ahead of Edinburgh Fringe

Ahead of this year’s Edinburgh Fringe, Cardinal is bringing together an exciting line-up of culinary talent from Edinburgh and London for a one-day-only Mexican brunch.

Taking place on Sunday 2nd August, Cardinal’s Tomás Gormley will be joined in the kitchen by Josh Ritchie of The Gilded Saloon, alongside Cesca Eastment and Celia D’Ortiz, the duo behind Mexican pop-up Tía Chela’s. The collaboration marks a reunion for Gormley, Ritchie and Eastment, who previously teamed up during last year’s Fringe at Coop.

Tía Chela’s was founded as a celebration of Mexican cooking, blending Celia D’Ortiz’s Spanish-Mexican heritage with Cesca Eastment’s experience of living and working across Mexico. The pair are bringing their month-long pop-up to Edinburgh this summer, with this special brunch offering an early opportunity to sample their vibrant, ingredient-led approach.

Running from 11am to 3.30pm, the menu will showcase a range of Mexican-inspired dishes, including oysters, tacos, enfrijoladas and totopos, followed by dessert. A selection of Mexican-inspired cocktails will also be available, adding to the festival-ready atmosphere.

Walk-ins will be welcome on the day, though reservations are recommended for those keen to secure a table. The event is set to kick off the Fringe season in style, highlighting the collaborative spirit and creativity that defines Edinburgh’s summer food scene.
