First Look: Cabo Brings Pacific-Fusion to Edinburgh

Edinburgh’s culinary landscape is set to be enriched with the vibrant addition of Cabo, the city’s inaugural Pacific-fusion restaurant and bar, which officially opens today.

Guests are invited to immerse themselves in Cabo’s lively atmosphere and distinctive flavours, with reservations now available and an exclusive 25% introductory discount on food running until the end of August.

Managed by the acclaimed Bow Hospitality, Cabo represents the group’s first venture in Edinburgh and its twelfth establishment overall.

Cabo infuses the lively essence of Mexico’s party peninsula into the heart of Scotland’s capital, promising an extraordinary dining experience.

Crafted as an immersive retreat by the esteemed artist and interior design studio, JA!COCO!, Cabo’s interior design is a sensory delight. Upon entering, guests are whisked away to the Pacific Coast amidst a riot of colours and dramatic elements.

The venue is adorned with tropical textures, lush greenery, and striking terracotta tiles, creating Instagram-worthy moments at every corner.

Cabo’s signature aesthetic radiates fun and party vibes, featuring a colour scheme of sunset orange and bold magenta, complemented by quirky wooden chairs and vibrant, custom fabric-covered booths.

The design’s curves and ambient lighting evoke the warm glow of a sunset. A notable highlight is the striking hand-drawn mural, a dreamy homage to El Arco, the iconic arch of Cabo San Lucas, depicted in sea blue and bright white.

Pacific palms and foliage frame the bespoke bar, which also hosts a live sushi-making station, providing diners with an engaging culinary experience.

Cabo’s 70-seat venue offers a dynamic blend of Baja Californian, Japanese, and Mexican cuisines. The menu, ideal for casual sharing, includes delectable ceviche platters, hand-pressed soft shell tacos, and 80-day dry-aged Millers of Speyside Scotch steak.

Already generating excitement among early diners, the menu is set to become a summer favourite.Now open seven days a week from lunch until late, Cabo is located at the former Superico site at 99 Hanover St.

The venue provides an all-day casual dining experience, effortlessly transitioning from a vibrant dining area to a lively late-night bar.

With live DJs creating an atmosphere from Thursday to Sunday, Cabo is poised to become Edinburgh’s premier destination for unforgettable dining and social experiences.

Daryl Knox, Operations manager at Bow Hospitality, shared his excitement about the opening: “We’re delighted to bring our first venue to Edinburgh and can’t wait for the Capital to experience what we have been working so hard on.

“The elevated menu is exceptional and we’re really proud of what we’ve achieved with both the design and the menu offering.”
