Chef-restaurateur Nico Simeone is set to open Lennox Edinburgh this July, marking the third and final location in the concept’s initial expansion following sold-out launches in Manchester and Glasgow.
Positioned as a more personal evolution of Simeone’s cooking style, Lennox moves away from the structured, theme-led format that propelled Six by Nico to national recognition. Instead, the new concept focuses on instinctive cooking, bold flavours and ingredient-led dishes, with an emphasis on nostalgia, technique and indulgence.
Edinburgh’s West End has been chosen as the latest home for Lennox, bringing its fire-led approach and open kitchen format to the capital. The restaurant will centre around a fully visible kitchen, allowing diners to experience the pace and theatre of service, with dry-ageing cabinets and a bespoke barbecue grill forming key features of the space.
The design reflects Lennox’s emerging identity, combining industrial materials such as steel and concrete with low lighting to create an intimate setting. Inspired by New York’s dynamic dining scene, the venue is designed to transition from daytime service through to late-night dining and drinks.


Speaking ahead of the launch, Simeone said:
“Launching Lennox has been a really exciting next step in my career. The positive feedback and response we’ve seen in Manchester and Glasgow has been incredible, and opening in Edinburgh feels like a natural next step for the concept. Lennox allows me to cook instinctively and personally. It’s about stripping everything back to what matters most: great ingredients, great technique, and food that people genuinely want to eat. Edinburgh has long been a huge part of my journey as a chef, and I’m really excited to be able to bring this next step to one of the first cities I opened in many years ago.”
The menu will draw on familiar classics, reworked through contemporary techniques, with a focus on open-fire cooking and dishes designed for sharing. The approach combines comfort-led dining with a more modern, energetic style, underpinned by strong craftsmanship and flavour.

Lennox Edinburgh will open at 40 Queensferry Street, taking over the current Six by Nico Edinburgh West site. Simeone’s Hanover Street restaurant will continue to operate under the Six by Nico brand, retaining its signature six-course tasting menu format.
With a deliberately limited capacity, demand for tables is expected to be high. Diners can register for priority booking access via the Lennox website, with early access offered ahead of general release.
