Celebrated Scottish Chef Tom Kitchin has released a new book of comforting pub classics.

The Scran & Scallie by Tom and his wife Michaela tells the story of their pub in Edinburgh’s Stockbridge area, including recipes for traditional Scottish dishes such as Kedgeree and Venison Wellington.

The book is now available for pre-orders ahead of launch.

The book follows the couple’s journey from opening The Scran & Scallie – a warm and welcoming pub rooted in Scotland’s traditions.

What began as a family venture, alongside their Michelin star restaurant The Kitchin, quickly became a neighbourhood hub and the leading gastropub in Edinburgh. Here locals and visitors, and Hollywood actors and royals gather to share great food and company.

This new book tells the story of that journey while celebrating the philosophy that shaped it: “From Nature to Plate.” Guided by the seasons and inspired by Scotland’s rich larder, The Scran & Scallie has reimagined classic dishes such as Cullen Skink, Fish pie, Steak pie, Cock-a-leekie soup and the guests’ favourite; Ham, Egg & Chips, while embracing new creative dishes that reflect the pub’s Scottish-Scandi heritage.

Alongside these recipes are stories of the people who make the pub so special – dedicated farmers, foragers, gamekeepers and fishermen who bring the best of Scotland’s coast and countryside to the table every day, in rain and shine, all year around. 

With heartfelt anecdotes, favourite family memories, and a deep sense of community spirit, the book captures the soul of a pub that has become much more than a place to eat.

The Scran & Scallie is truly a celebration of food, family and friendship – an invitation to sit down, relax, and enjoy Scotland at its finest.
