The Three Chimneys launches exclusive Skye-inspired gin in partnership with North Point Distillery

The Isle of Skye’s world-famous restaurant with rooms, The Three Chimneys, has teamed up with one of the UK’s most northerly distilleries to launch its own new gin brand. 

Over the last year, The Three Chimneys has been working with North Point Distillery in the far north Scottish Highlands to create its own label spirit exclusively for guests visiting the island. 

A custom-built 200L electrically fired still, called ‘Audrey’, was created specially by North Point Distillery to make The Three Chimneys Gin. 

Distilled and bottled in a small batch of just 240 bottles, The Three Chimneys Gin is a classic Old Tom gin (40% vol). 

The flavour profile draws inspiration from The Three Chimneys’ rugged Skye landscape, weaving notes of hand-picked wild gorse, Douglas fir and kelp with warming citrus notes. 

The Three Chimneys Gin is contained in a 70cl bevelled glass bottle created by international glass bottle supplier and family-run business, Croxsons. 

The painting featured on The Three Chimneys gin label also takes inspiration from the natural Skye landscape. The original watercolour is by Skye-based artist Peter McDermott and is titled ‘Sunshine and showers – Loch Dunvegan’, which can be seen from the venue. 

To celebrate the launch of the new spirit, The Three Chimneys has also created its own gin-based cocktail made with 100% British ingredients. The Three Chimneys’ Marmalade Martini includes The Three Chimneys Gin, Atlantic Distillery orange bitters and triple sec, Bramley & Gage dry vermouth and The Three Chimneys marmalade.

bottle supplier, Croxsons. Together, we share a focus on authenticity and sustainability in everything that we do. 

“The Three Chimneys Gin has been handcrafted in a small batch and takes inspiration from our Isle of Skye home. It’s the perfect option to serve over ice with a splash of tonic.

“We’ve also used our new gin to create an exclusive new Marmalade Martini cocktail for our guests.”

Founded in 2020, North Point Distillery prides itself on creating small batches of premium, authentically Scottish spirits, whilst focussing on sustainability and making every effort to leave as little impact on the environment as possible. 

The distillery is housed in a former US Navy building from the Cold War and its whisky cellar is an old bomb shelter. 

Canadian-born Alex MacDonald is Founder and Co-CEO of North Point Distillery, which is based at Forss, near Thurso in Caithness. A graduate of the University of St. Andrews with a BSc in Business and a passion for spirits, Alex has years of experience growing startups and young businesses. 

Commenting on the distillery’s new partnership with The Three Chimneys, Alex said: 

“Working alongside such a notable brand as The Three Chimneys, has been a hallmark experience for our team. Our two teams collaborated on this project from start to finish, 

from brand creation to liquid curation, with sustainability and transparency throughout. 

“We look forward to continuing to work with The Three Chimneys team for many years to come.”

Bottles of The Three Chimneys Gin are expected to be made available for guests to purchase and take home as a souvenir from the original Skye croft house at Colbost. It will also be served at The Three Chimneys at Talisker, which is located in a new standalone waterfront venue at Skye’s oldest distillery on the shores of Loch Harport.

Since opening as a restaurant in 1985, The Three Chimneys has been a trailblazer on the Isle of Skye, inspiring visitors to travel from all over the world to satisfy their appetite for the island’s fresh, local produce. The multi award-winning five-star AA restaurant has three AA rosettes for culinary excellence and is included in the Michelin Guide for Great Britain and Ireland, as well as The Good Food Guide. 

The Three Chimneys Restaurant and The House Over-By with its choice of six guest rooms is located in an area of outstanding natural beauty at Colbost on the shores of Loch Dunvegan, with the dramatic backdrop of the Duirinish peninsula of Skye.
