Cheesy Chicken Quesadillas

Quesadillas are a delightful Mexican dish that combines crispy tortillas with a variety of fillings, making them perfect for a quick lunch or a satisfying snack.

This recipe focuses on chicken quesadillas, featuring tender chicken, melted cheese, and a touch of spice, all encased in golden, crispy tortillas.

Whether you’re cooking for yourself or entertaining guests, these quesadillas are sure to impress.

Ingredients

  • 4 large flour tortillas
  • 3 chicken breasts (about 450g), cooked and shredded
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 200g grated mature cheddar cheese
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil (plus more for frying)
  • Salsa, for serving (optional)
  • Sour cream, for serving (optional)

Method

  1. Prepare the Filling: In a large bowl, combine the shredded chicken, sliced peppers, onion, and fajita seasoning. Mix well to ensure the chicken is evenly coated with the seasoning.
  2. Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a small amount of cheese over half of the tortilla. Add a quarter of the chicken mixture on top of the cheese, then sprinkle another layer of cheese over the filling. Fold the tortilla in half to enclose the filling.
  3. Cook the Quesadillas: Heat a non-stick frying pan over medium heat and add a splash of olive oil. Once hot, place the folded quesadilla in the pan. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip it over using a spatula and cook for another 2-3 minutes until the other side is also golden and the cheese has melted.
  4. Repeat: Remove the cooked quesadilla from the pan and place it on a chopping board. Repeat steps 2 and 3 with the remaining tortillas and filling.
  5. Serve: Cut each quesadilla into wedges and serve warm with salsa and sour cream on the side.
