Grilled Halloumi and Vegetable Skewers with Honey-Lime Drizzle

These colourful skewers combine salty, squeaky halloumi cheese with a medley of grilled vegetables for a perfect summer appetizer or light meal. The honey-lime drizzle adds a bright, tangy finish that complements the Mediterranean flavours.

Ingredients:

  • 225g halloumi cheese, cut into 1-inch cubes
  • 1 courgette, sliced into 1/2-inch rounds
  • 1 red pepper, cut into 1-inch squares
  • 1 red onion, cut into 1-inch chunks
  • 200g cherry tomatoes
  • 30 ml olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

For the honey-lime drizzle:

  • 60 ml honey
  • Juice of 1 lime
  • Zest of 1 lime

Instructions:

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  2. In a large bowl, whisk together olive oil, minced garlic, oregano, salt, and pepper.
  3. Add the halloumi cubes and vegetables to the bowl and toss gently to coat with the marinade. Let sit for 15-30 minutes.
  4. Preheat your grill to medium-high heat (around 180-200°C).
  5. Thread the marinated halloumi and vegetables onto skewers, alternating between cheese and veggies.
  6. Grill the skewers for 2-3 minutes per side, rotating 3-4 times, until the vegetables are tender and the halloumi is golden brown with nice grill marks.
  7. While the skewers are grilling, whisk together honey, lime juice, and lime zest in a small bowl to make the drizzle.
  8. Remove the skewers from the grill and place on a serving platter. Drizzle with the honey-lime mixture and serve immediately.

Tips:

  • Halloumi has a high melting point, making it perfect for grilling. It will become soft and flavorful without melting off the skewers.
  • For extra flavour, you can add fresh herbs like mint or parsley to the marinade.
  • Serve these skewers with warm pita bread and tzatziki sauce for a complete Mediterranean-inspired meal.
