In a major move set to turn heads across the Scottish restaurant scene, Kochchi Glasgow has appointed Shenal Suwaris as its new Executive Chef, just two months after the venue’s official launch. The high-profile arrival signals serious intent from the ambitious Sri Lankan concept as it looks to cement its place among Scotland’s most exciting new openings.
Chef Suwaris joins Kochchi following his departure as Head Chef at Sushi Samba Edinburgh, where he was part of a high-performing culinary team delivering bold, contemporary cuisine in one of Scotland’s most dynamic dining environments.
Widely regarded as one of the country’s most exciting Sri Lankan chefs, Shenal is celebrated for his vibrant approach to flavour and his deep connection to the food culture of his home country. Originally from Sri Lanka, his cooking is rooted in the traditions, techniques and spice heritage of the island — reimagined with refined presentation and modern flair.
His appointment at Kochchi represents a meaningful reunion, as he joins close friends and founders Suki Jayaratne and Shehan Fernando to help lead the brand into its next chapter.
“Joining Kochchi at this stage feels incredibly special,” said Shenal Suwaris. “We’ve shared a vision of showcasing true Sri Lankan flavours in a modern and exciting way. It is an honour to step into the kitchen just two months after launch and help shape its future.”


From May 2026, Chef Suwaris will introduce an immersive Sri Lanka Tasting Menu at Kochchi Glasgow, designed to take guests on a culinary journey through the island’s diverse regions and bold flavour profiles. The multi-course experience will highlight heritage recipes, contemporary interpretations and carefully curated spice blends—offering a deeper exploration of Sri Lanka’s rich and varied food culture.
Under his leadership, the kitchen will focus on refining Kochchi’s core menu, enhancing presentation and introducing seasonal additions while staying true to the restaurant’s vibrant street food roots.
Suki and Shehan commented: “Bringing Shenal on board was always part of the bigger dream. His passion, skill and deep understanding of Sri Lankan flavours make him the perfect person to lead our kitchen. The launch of the Sri Lanka Tasting Menu in May 2026 will be a huge moment for us and for Glasgow’s dining scene.”
Alongside his work at Kochchi Glasgow, Shenal will also embark on a series of foodie festivals, industry trade shows and collaborative guest chef partnerships across the UK.
Passionate about championing Sri Lankan cuisine on a broader stage, he plans to use these platforms to educate diners and hospitality professionals alike on the depth, diversity and sheer joy of the island’s food culture — from complex spice blends and regional curries to vibrant street food traditions. Through live demonstrations, curated tasting experiences and collaborative menus, Shenal hopes to shine a spotlight on the bold flavours and rich heritage that define Sri Lankan cooking, inspiring greater appreciation and understanding within the UK restaurant trade and beyond.
In his new role, Shenal will oversee both the flagship kitchen at Kochchi Glasgow and the Kochchi site within Bonnie & Wild in Edinburgh, ensuring consistency, creativity and quality across the brand. Working closely with both teams, he will lead menu development, training and kitchen operations, driving standards while continuing to evolve Kochchi’s Sri Lankan offering across the two cities.
Since opening, Kochchi Glasgow has quickly gained attention for its lively atmosphere and bold Sri Lankan street food-inspired small plates, hosting over 2,500 guests in its first month. With Shenal Suwaris now heading the kitchen, the restaurant anticipates an exciting period of growth and culinary evolution.
