Step inside Seaton House and you’ll find a bar where every glass tells a story. Each cocktail is thoughtfully composed to reflect the warm sophistication of the room – rich woods, amber light, and the quiet hum of conversation. Our bartenders draw inspiration from classic recipes, blending tradition with a touch of indulgence to create drinks that are both familiar and unexpected.

Black Cherry Boulevardier

This cocktail began as a tribute to the timeless elegance of our whisky bar. To craft it, our bartender combined Black Ruby whisky, Aperol, sweet vermouth, and cassis – blending their layered flavours into perfect harmony.

Poured over ice in a weighty rocks glass, it gleamed like a polished gemstone. A twist of lemon was expressed over the top, adding a whisper of citrus to offset the depth of the blend. The result is a spirit-forward, jewel-toned drink that feels perfectly at home among the leather chairs and shelves of aged bottles.

Ingredients:

  • 50ml apple and cinnamon-infused Bulleit bourbon (infused in-house)
  • 3 dashes Angostura bitters
  • 2ml homemade cinnamon syrup
  • Caramelised apple slice garnish

Cinnamon Old Fashioned

This cocktail pays homage to the comforting aromas that fill our whisky bar during the colder months. The bartender begins by infusing bourbon with crisp apple and cinnamon, allowing the spirit to rest until it captures both the depth of oak and the warmth of spice.

A touch of house-made cinnamon syrup is stirred in gently, keeping the drink bold and spirit-forward. Poured over a large block of ice, it settles with a slow, steady glow – the kind that invites quiet reflection. A caramelised apple slice rests delicately on top, offering sweetness and a hint of char.

The result is an Old Fashioned that feels timeless, yet carries the soul of autumn in every sip.
