Stirling Distillery make history filling their first whisky cask

STIRLING Distillery has announced they have filled their first whisky cask with new make spirit – the first time whisky has been made in Stirling for 171 years. The distillery have a limited number of cask club places left for their exclusive whisky club that will give members first refusal on all new whisky releases.

For £350, members will get to be part of Stirling whisky history as well as enjoying their VI Casks for King James six bottle set. This will be an excellent Christmas gift for whisky lovers and rare bottle collectors looking to invest in whisky. These rare bottles – with only 300 available – will be released biannually over three years from 2027. More details can be found on their website.

Whisky hasn’t been distilled in the city since 1852 when the original Stirling Distillery closed its doors. The first brewing mash took place on Tuesday 3rd October 2023 and the first cask was filled on Monday 27th November. The delicate distilling process will see craft small batch runs over the next few months as the distilling team develop the whisky’s unique gentle lowland flavour. The first releases of Stirling whisky will be ready in late 2026.

“I’m proud of how we have evolved as a business and excited about our new make spirit. It has a great soft flavour with a fair bit of maltiness. We’re all looking forward to seeing how this matures in our casks and grateful to everyone who has invested in our whisky journey so far”.

Stirling Distillery opened its doors for the first time in 2019. Initially focusing on gin and having won countless awards, it has now expanded into whisky production.

The distillery began their whisky journey with the launch of their Sons of Scotland independent bottling range which was launched in 2021. The limited edition collection celebrates the history of Stirlingshire’s rich whisky making heritage with whiskies drawn from different regions of Scotland; the Highlands, Speyside, the Lowlands, and the Islands.
