Whisky Craft launches in Edinburgh with Rare Single Cask Trio

A new independent bottler, Whisky Craft, has launched in Edinburgh with the release of its debut collection – The Inaugural Season – a trio of distinctive single cask Scotch whiskies drawn from three of Scotland’s most iconic whisky regions.

Founded with the vision to take customers on a journey through Scotland’s finest whiskies, Whisky Craft blends flavour, place, and storytelling. The brand’s first release features rare and limited expressions from Jura, Mortlach, and Caol Ila – each bottled at cask strength without chill-filtration or colouring.

“Whisky Craft was born from my own desire to create something that reflects both the beauty of Scotland and also celebrates the craftmanship behind the liquid,” said the founder, Sonny Charles.

“These are whiskies chosen for their character and story. Each one marks the beginning of what we hope is a long and meaningful journey with whisky fans around the world.”

The Inaugural Season Bottlings:

  • Jura 36
    Matured for 36 years, this Isle of Jura dram is soft, savoury and gently spiced. Drawn from a single Octave cask and bottled with care. Only 66 bottles exist, making it delicate, complex and worth the wait.
  • Mortlach 12
    A bold and robust Speyside single malt, drawn from a single Octave and bottled at natural cask strength. Full-bodied and warming. Only 64 bottles are available.
  • Caol Ila 9
    Youthful but powerful – a cask strength Islay whisky full of coastal vibrancy and smoky intensity. It punches well above its age statement. Just Islay as it should be, pure, smoky and alive. Only 152 bottles drawn from a single hogshead.
