Scotland is renowned for its high-quality seafood; salmon is a standout favourite. This Scottish Salmon Caesar Salad offers a fresh twist on the classic Caesar salad by substituting the traditional chicken with succulent Scottish salmon.

Ingredients

For the Salad:

  • 2 Scottish Salmon Fillets
  • 1 Romaine Lettuce (chopped)
  • 120 mL Cherry Tomatoes (halved)
  • 60 mL Red Onion (thinly sliced)
  • 60 mL Grated Parmesan Cheese
  • 240 mL Croutons
  • 1 Lemon (cut into wedges for serving)

For the Caesar Dressing:

  • 120 mL Mayonnaise
  • 60 mL Grated Parmesan Cheese
  • 15 mL Lemon Juice
  • 5 mL Dijon Mustard
  • 5 mL Worcestershire Sauce
  • 1 Garlic Clove (minced)
  • Salt and Pepper to taste

Instructions

Preparing the Salmon:

  1. Season the Salmon: Preheat your oven to 200°C. Season the salmon fillets with salt and pepper.
  2. Bake the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes until the salmon is cooked and flakes easily with a fork. Allow the salmon to cool slightly, then flake it into large pieces.

Making the Caesar Dressing:

  1. Combine Ingredients: In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper until smooth and well combined.

Assembling the Salad:

  1. Prepare the Lettuce: In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, and red onion.
  2. Add the Salmon and Croutons: Gently toss the flaked salmon and croutons with the salad.
  3. Dress the Salad: Drizzle the Caesar dressing over the salad and toss to coat evenly.
  4. Garnish and Serve: Sprinkle the grated Parmesan cheese over the top and serve with lemon wedges on the side.
