A new collaboration between Isle of Raasay Distillery and Duisdale House Hotel will bring together two of Skye’s food and drink destinations in a partnership designed to showcase the island’s growing reputation as a destination for premium dining and whisky tourism.
Launching this spring, the partnership will debut with a one-off supper club hosted at Duisdale House Hotel on Saturday 23 May, before evolving into an ongoing drinks menu available alongside the hotel’s a la carte menu throughout the summer season.
Set on the Southern coast of Skye overlooking the Sound of Sleat, Duisdale House Hotel has recently introduced a refined culinary direction under Executive Chef Kieran McCallion, centred around a seasonal menu that celebrates the island’s natural larder. Dishes draw on local seafood, Highland produce and traditional techniques, delivered with the warm, considered hospitality that defines the Sonas Collection.

The new partnership with Isle of Raasay Distillery builds on this approach, pairing a one-time-only tasting menu with a curated selection of award-winning lightly peated whisky and Hebridean gin from the distillery set on the small island of Raasay, just a short ferry ride away from the Isle of Skye. Guests attending the launch supper club will experience a bespoke drinks pairing designed to complement each course, with introductions from both the chef and distillery team offering insight into the provenance and craftsmanship behind each element of the evening.
The menu will feature dishes such as tomato and fennel panna cotta, scallop with lardo and smoked fish, and a reimagined ‘coq au vin’ with chicken mousse agnolotti and leek fondant, reflecting both the season and the surrounding landscape.
Drinks will begin with a refreshing ‘Sour by the Sound’ featuring Isle of Raasay Gin paired with rhubarb, lemon and foaming bitters. The following courses will be paired with a dram of one of Isle of Raasay Distillery’s single malt Scotch whiskies – including their flagship, The Draam – a lightly malt peated with rich, dark fruit flavours – in addition to rare and limited releases like the Masala cask, matured in ex Frazzitta Marsala Vergine barriques for notes of baked apples with apricots and lingering smoked toffee. A non-alcoholic serve will be provided by Feragaia, Scotland’s Free Spirit 0% ABV, for a refreshing palette cleanser with citrus and herbal notes.
Following the launch event, guests dining at Duisdale will have the option to order Raasay spirits to be paired with Duisdale’s a la carte menu, alongside Raasay whisky flights available in the hotel bar.

The collaboration reflects a wider shift in how visitors experience Skye, with food and drink increasingly central to travel on the island, and closer relationships forming between independent producers and kitchens.
