Ingredients
- 4 large flour tortillas
- 3 chicken breasts (about 450g), cooked and shredded
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 onion, sliced
- 200g grated mature cheddar cheese
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil (plus more for frying)
- Salsa, for serving (optional)
- Sour cream, for serving (optional)
Method
- Prepare the Filling: In a large bowl, combine the shredded chicken, sliced peppers, onion, and fajita seasoning. Mix well to ensure the chicken is evenly coated with the seasoning.
- Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a small amount of cheese over half of the tortilla. Add a quarter of the chicken mixture on top of the cheese, then sprinkle another layer of cheese over the filling. Fold the tortilla in half to enclose the filling.
- Cook the Quesadillas: Heat a non-stick frying pan over medium heat and add a splash of olive oil. Once hot, place the folded quesadilla in the pan. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip it over using a spatula and cook for another 2-3 minutes until the other side is also golden and the cheese has melted.
- Repeat: Remove the cooked quesadilla from the pan and place it on a chopping board. Repeat steps 2 and 3 with the remaining tortillas and filling.
- Serve: Cut each quesadilla into wedges and serve warm with salsa and sour cream on the side.
