Coop, the popular fried chicken and lobster roll pop-up from Cardinal’s Tomás Gormley, has made a much-anticipated return to Edinburgh for another summer of bold, flavour-driven street food.

Running until the end of August, Coop will serve festival-goers from its base in George Square Gardens, and from 30 July, will also appear daily at The Gilded Saloon.

Renowned for its crowd-pleasing Fried Chicken with fermented peach hot sauce and Smoked Lobster Rolls -inspired by Gormley’s signature dish at Cardinal – Coop has this year expanded its enticing menu.

New highlights include Pulled gochujang Pork and an Aged Beef and Bone Marrow Burger, both set to appeal to adventurous palates and burger aficionados alike.

Far from your average festival fare, Coop offers food powered by Gormley’s fine-dining pedigree and a commitment to bold, fire-driven flavours.
