The Isle of Raasay Distillery, a pioneer among Scotland’s new generation of whisky producers, is delighted to announce the launch of its Oak Species Maturation Series Tasting Pack.

This latest addition to the distillery’s innovative maturation series invites Raasay enthusiasts and whisky aficionados to explore four distinct species of oak, each imparting its own unique flavour profile to the Isle of Raasay’s signature lightly peated single malt.

While the previous contents of casks—whether bourbon, sherry, or red wine—are often discussed in whisky maturation, the species of oak itself plays a crucial role in defining the spirit’s final character. With this second instalment in the series, whisky lovers can experience first-hand how different oak varieties contribute distinctive flavours and textures.

The pack features four species, all virgin oak, demonstrating the remarkable range of flavours that can be achieved from carefully selected casks.

Tasting Notes from Four Virgin Oak Casks

  • Quercus Humboldtii (Colombian Oak): This rare oak offers an elegant balance, bringing herbaceous wood smoke and caramel to the nose. On the palate, rich notes of crystallised brown sugar and crème brûlée take centre stage, with a finish that lingers with hints of mint and green tea. The whisky is mouth-filling, with clear notes of heather smoke and bright fruits, culminating in a complex, long finish with vanilla, butterscotch, and spicy oak.
  • Quercus Petraea (Hungarian Oak): Known for its rich, spiced complexity, this oak brings aromas of peat smoke and cloves that carry through to a palate of wood smoke and deep savoury spice, before softening into a subtle sweetness on the finish.
  • Quercus Robur (French Oak): This cask offers a bold contrast, with warm, rich fruit on the nose, followed by ripe fruit, dried raspberries, and hints of leather on the palate, culminating in a lingering spiciness.
  • Quercus Muehlenbergii (North American Oak): Presents a darker, more intense profile, with aromas of wood smoke and dark fruits leading into a palate of rich, smoky bacon and maple syrup, before finishing with lingering notes of ginger, cinnamon, and deep fruitiness.

This release demonstrates the distillery’s innovative approach to oak policy, exploring beyond traditional Scotch whisky maturation while remaining true to the island’s distinctive style.
