On Sunday 25 January, The Palmerston will play host to an exclusive kitchen takeover by Bristol-based Korean restaurant Bokman. Renowned for its vibrant take on Korean cuisine, Bokman is bringing its bold flavours north for a one-night-only collaboration that celebrates Burns Night in true cross-cultural style.
Owners Kyu Jeong Jeon and Duncan Robertson have curated a special three-course menu that fuses Bokman’s much-loved classics with one-off creations inspired by Scotland’s ingredients and culinary heritage. The result is a feast that bridges the two nations’ food traditions through inventive use of flavour, spice and local produce.

To begin, diners will be treated to an array of small plates including oysters with kimchi ice, Bokman salad – a refreshing Chinese leaf and sesame creation topped with roasted seaweed and pine nuts – crisp gochu twigim (tempura-fried stuffed chillies) and soondae, a Korean-style black pudding served with mussel salt.
The main course centres around haggis joengol, a rich hotpot featuring lamb neck, lamb tripe, haggis, dried radish tops, perilla leaves and seeds, and hand-cut noodles, accompanied by an assortment of traditional banchan (side dishes, pickles and kimchi) and rice. For dessert, guests can look forward to a playful Scottish twist on a classic – whisky and matcha tiramisù, an inspired finale that nods to Burns Night traditions while embracing contemporary Korean technique.
