The Three Chimneys, one of Scotland’s most iconic restaurants, is celebrating a new milestone as its latest venture, ‘The Three Chimneys at Talisker’, earns recognition in the Michelin Guide for Great Britain and Ireland, less than two years after opening on the Isle of Skye.
In spring 2024, The Three Chimneys and Skye’s oldest distillery, Talisker, joined forces for the first time to launch ‘The Three Chimneys at Talisker’ experience at the distillery on the shores of Loch Harport.
Since opening its doors, The Three Chimneys at Talisker has quickly established its reputation as a world-class food and travel destination, as well as leading the rise of the gastro-distillery on the island.
The Three Chimneys at Talisker has now been recognised by Michelin for culinary excellence. The Michelin Guide celebrates only the best food and drink experiences around the world. All restaurants featured in the guide are considered good, with the ‘Michelin Recommended’ status.

As Skye’s most established and pioneering destination restaurant, The Three Chimneys is continuing to reinforce the island’s reputation for culinary creativity at Talisker.
The Three Chimneys at Talisker experience invites guests to fully immerse themselves in the rugged coastal landscape of Skye, through locally sourced food and drink and a shared commitment to local growers, crofters, producers and craftspeople on Skye.
Inspiration for the menus is taken from Talisker Distillery’s unique location on the Minginish peninsula and an air that is filled with the salt and spray of the sea. Dishes complement the maritime character of Talisker with its notes of smoke, spice, peat, salt and pepper.
Led by head chef of The Three Chimneys, Paul Green and his team, The Three Chimneys at Talisker’s a la carte menu for 2026 will include an array of freshly caught langoustines, oysters, mussels and scallops. Diners can also enjoy the already famous seafood platter or locally cured meats and cheeses.
Paul Green, head chef of The Three Chimneys, said:
“We’ve been overwhelmed by the fantastic response to The Three Chimneys at Talisker dining experience since launching the venture with the distillery in spring 2024.

“Earning our place in the Michelin Guide just two years later is a huge achievement and is testament to the continued dedication and passion of our team, as well as support from all our local suppliers.
“The ethos of both the Three Chimneys and Talisker are rooted in local produce and the communities that make the Isle of Skye. With this in mind, The Three Chimneys at Talisker will continue to celebrate the best of Skye, Land and Sea.”
Whisky Magazine has already reported that The Three Chimneys at Talisker collaboration “provides a blueprint for success that other distilleries should take note of” and global travel guide Lonely Planet has named Skye one of the ‘best epicurean regions’ in Europe, alongside Tuscany, Piedmont, and Copenhagen.
In 2026, a variety of exclusive themed evening and lunchtime events at The Three Chimneys at Talisker will also showcase the best of Skye’s culinary and cultural offerings, including summer barbecues, traditional live music and ‘The Distillers Table’ events inspired by Talisker Whisky and the rich maritime heritage of Skye.
Leigh Aitken, Talisker Brand Home Manager, commented:
“The Three Chimneys at Talisker has added an exciting element to the distillery experience for our guests – an element few other distilleries can match.
“The restaurant and distillery are both an embodiment of what makes Skye, Skye, and this achievement is recognition of the exquisite quality and careful craftsmanship that makes a visit for foodies, whisky fans and people who love to sample the best of a place, simply unmissable.”
The Michelin Guide inspectors said:
“This restaurant on the western side of the island has an enviable location in more ways than one. Firstly, it’s on the edge of Loch Harport and comes with glorious views, and secondly, it’s right by the Talisker distillery – making a pre- or post-lunch tour a must for whisky enthusiasts.
“With Skye’s waters offering so much super produce, it’s no surprise to see plenty of seafood on the menu, but also expect meat dishes from local venison to traditional haggis, neeps and tatties. Talisker whisky is of course a feature and you can even have a wee dram poured over your oysters.”

For the 2026 season, The Three Chimneys at Talisker on the shores of Loch Harport will offer a daytime service from 1st February, whilst the original Skye croft restaurant at The Three Chimneys in Colbost will continue to welcome guests with a choice of lunchtime and evening dinner menus.
The Three Chimneys at Talisker provides space for up to 40 people. Advance online bookings of up to eight people per table are welcomed. Larger and exclusive use bookings are accepted by prior arrangement by emailing talisker@threechimneys.co.uk
The Three Chimneys at Talikser will be closed every Wednesday and Thursday throughout the year and will be fully closed for winter from 19 December.
