Since its establishment in Glasgow in 2017, Six by Nico has expanded to eight locations across the UK, with its Aberdeen restaurant opening its doors in 2022.
He said: “Over the last few years and particularly since the pandemic, we have really been focused on innovating and growing the business, but this next phase is very much about us nurturing our established restaurants.
“We have never seen ourselves as ‘just a restaurant’ but more of a creative space that brings people together, whether that’s our customers or brand collaborations.”
To showcase their culinary expertise, Six by Nico hosted “The Best of Six,” an exclusive dining event featuring a selection of dishes that highlight the restaurant’s creativity and talent.
The menu included pescatarian, vegetarian, and vegan options, ensuring a diverse experience for all guests.
Nico elaborated on the collaborative process behind their menu creation for the event: “We have a massive creative team that will support the menu development, and it’s also dishes our guys have done before.
“We wanted to show a variety of the way we create. It showcases the company in terms of where we take inspiration for our courses.”
The food was exceptional, curated to highlight the diverse range of courses Six by Nico offers, with each dish accompanied by a unique narrative that enriched the dining experience.
The thoughtful pairing of wine with each course elevated the dining experience by expertly complementing the unique flavours of the dishes.
The service was superb, particularly thanks to Alistair Wilson, Regional Operations Manager at Six by Nico, who expertly explained each dish with captivating stories that heightened the excitement and appreciation for the food.
Aberdeen will soon welcome Somewhere by Nico, a conceptual cocktail bar that will offer a new tasting experience every six weeks.
Set to launch in November, it promises to introduce innovative cocktails that will perfectly complement the dining experience.
Nico emphasised the company’s commitment to nurturing established restaurants and enhancing customer experiences.
He said: “Our focus will be on enhancing the experience customers have with us and embedding our roots within the communities where we work.”
With its creative vision and commitment to Aberdeen, Six by Nico is set to revitalise the city’s culinary landscape while playing a key role in the ongoing regeneration of the city centre.
