Top international chef sails into ‘Captain’s Table’ dining series onboard Edinburgh’s floating hotel

One of Scotland’s top international chefs will be hosting the third in a series of collaborative ‘Captain’s Table’ dining experiences onboard Edinburgh’s luxury floating hotel, Fingal, on Sunday 19 April from 6pm  

For one night only, just ten diners are being offered the chance to step aboard the world-class foodie destination to enjoy a bespoke tasting menu created by Darin Campbell.

With over 30 years’ culinary experience around the UK, Darin was previously head chef at the two Michelin-starred Restaurant Andrew Fairlie at Gleneagles, and executive head chef of Sir Andy and Kim Murray’s Cromlix Hotel. He has also been awarded his own Michelin Star at Ballachulish House Hotel in the Scottish Highlands. 

Early on in his career, Darin spent some time working in fine dining establishments in London, including Petrus under the mentorship of Gordon Ramsay, and The Capital Hotel in Knightsbridge. Over the years, Darin has cooked for heads of state at the Royal Banquet, as part of the 2005 G8 Summit at Gleneagles. He also worked with Albert Roux MBE for nine years.

Today, Darin works as a private chef in the world of yachting, where he travels the globe cooking in some amazing locations with fantastic ingredients.

As part of Darin’s exclusive dining experience onboard Fingal, guests will be seated in The Bridge, the ship’s former command room turned private dining area, where refined cuisine and the unique nautical surroundings create an evening unlike any other in Edinburgh. 

Served around one large communal table, the set menu designed by Darin will be delivered in partnership with Fingal’s Head Chef, Pedro Barreira.

“For the third in our series of exclusive ‘Captain’s Table’ guest‑chef dining events on Sunday 19 April, we’re delighted to welcome international Scottish chef, Darin Campbell, aboard Fingal for the first time. 

“For one night only, Darin’s carefully curated tasting menu will celebrate top‑quality seasonal produce ingredients influenced by his own local foraging.” 

Guest chef Darin Campbell, added:

“I’m really excited to be cooking onboard Fingal with my good friend, Pedro Barreira. The two of us worked together for many years at Ballachulish House where we were lucky enough to get a Michelin star, so we’re going to relive a lot of memories. 

“I’ve been lucky enough to work at some of the best restaurants in Scotland and now work in yachting. I’m hoping to bring some of these influences and fantastic ingredients to this special menu.”

To elevate the evening further, expertly paired wines will be available and hand-selected by Fingal’s sommelier to complement Darin Campbell’s creations.

In December, Fingal retained two prestigious Rosettes for culinary excellence by the internationally recognised Automobile Association (AA) for the fourth year running. The former Northern Lighthouse Board tender ship was developed by the award-winning team at The Royal Yacht Britannia, which is located just 10 minutes away. Fingal is now the ultimate in luxury accommodation and dining.

Fingal is located opposite the Port of Leith tram stop, which offers a direct and easy transport link between Leith, Edinburgh city centre and Edinburgh Airport.
