Cask to coast to cocktail-smoked salt syrup unites Dorchadas and East Neuk Salt Co.

Dorchadas and East Neuk Salt Co. launch Smoked Salt Sugar Syrup; crafted from casks, North Sea waters salt, and a shared commitment to circular sustainability.

Two Fife-based producers – Dorchadas, award-winning makers of bold, Scottish rum, and the East Neuk Salt Co., known for their hand-harvested coastal salts – have come together in a circular collaboration that turns shared values into shared flavour.

The result? A small-batch Smoked Salt Sugar Syrup born from casks, smoke, salt, and spirit, built not from waste, but from respect. Respect for the craft. Respect for what’s left behind. And respect for what’s possible when two producers work in harmony.

This collaboration is part of a closed-loop partnership:

  • Dorchadas Rum uses the demineralised sea water a by-product of East Neuk Salt Co.’s process as the base of their Amber Spiced Rum.
  • Casks used to mature our single cask Washed Ashore are passed to East Neuk Salt Co. to smoke their salt.
  • That salt is used in East Neuk Salt Co.’s own handcrafted Smoked Salt Sugar Syrup, made to a special recipe crafted by Co-Founder and Chef of the East Neuk Salt Co., Mhairi Peattie.
  • The syrup is crafted and bottled in the East Neuk of Fife.

“This partnership is no gimmick. We partnered because it made sense, because our processes already complemented each other,” says David Taylor, Co-Founder of Dorchadas. “We take the crystal-clear water the East Neuk Salt Co. extracts from their salt-making process and use it as the base for our Amber Spiced Rum. Then, once the casks have done their work, we send them back, and they’re used to smoke the East Neuk salt.”

That salt becomes part of East Neuk Salt Co.’s own unique Smoked Salt Sugar Syrup recipe; a rich, briny, deeply layered syrup that brings a smoky-sweet complexity to drinks and dishes.

It’s not just sustainable. It’s circular, local, and personal. And it’s made just minutes apart, in the heart of the East Neuk.

“We believe in slow processes and strong partnerships,” says Darren Peattie, Founder of East Neuk Salt Co. “This collaboration is built on trust and quality. Nothing is rushed. Nothing is wasted. And every element, from the water to the cask, gets a second life.”

Smoked Salt Sugar Syrup isn’t just for cocktails, though it does extraordinary things to a daiquiri or an old fashioned. Its rich, smoky-sweet profile brings unexpected depth to marinades, roasted vegetables, and even desserts. Think salted caramel with backbone.
