Six by Nico Merchant City is proud to announce it has been awarded 1 AA Rosette, recognising culinary excellence and elevating its position within Glasgow’s vibrant dining scene.

Founded by acclaimed Glasgow chef Nico Simeone, Six by Nico has built a reputation for redefining accessible fine dining through innovation, storytelling, and exceptional value. The Merchant City restaurant exemplifies this vision, delivering a unique gastronomic experience that continues to captivate guests and critics alike.

At the heart of Six by Nico’s concept is its ever-evolving six-course tasting menu, which changes every six weeks. Each menu draws inspiration from a distinct theme, destination, or concept—transforming dining into an immersive journey that blends creativity with precision. From nostalgic flavours to globally inspired narratives, every experience is carefully curated to surprise and delight.

This AA Rosette award highlights the restaurant’s commitment to quality ingredients, refined technique, and consistently high standards of execution. It also reinforces Six by Nico’s mission to make fine dining more approachable without compromising on innovation or experience.

Andy Temple, Chief Creative Officer at Six Company said:

“Receiving an AA Rosette for our Glasgow Merchant City restaurant is a fantastic achievement for the entire team. Our goal has always been to create something exciting, accessible, and memorable for every guest, and this recognition reflects the passion and dedication of everyone involved.”

Six by Nico Merchant City continues to offer diners an experience that goes beyond the plate – combining affordability with a sense of theatre that ensures no two visits are ever the same. The current six week menu cycle focuses on the tastes of Korea with a Seoul themed tasting menu.
