From 8-10pm, guests can indulge in a meticulously crafted experience that highlights the chef’s innovative approach to French gastronomy with distinctive Irish influences.

The evening’s culinary journey begins with an elegant amuse-bouche of egg toast adorned with caviar and herbs.

Guests will progress through carefully curated sharing plates, including a tantalising tuna tartare with avocado and spicy radish, seared foie gras with winter truffle, and a delicate Caesar salad with black truffle.

The main course promises to be a highlight, featuring spice-crusted Castletown Bere scallops, sumptuous beef tenderloin with truffled potato pancakes, and a perfectly prepared pan-roast Skeaghanore duck breast with honey hibiscus glazed squash.

The celebration concludes with a decadent dessert sharing plate, presenting a citrus pavlova with blood orange sorbet, a festive gingerbread soufflé, and a classic warm chocolate cake – each dish designed to provide a sweet farewell to the passing year.
