This Black History Month, two chefs whose paths have intertwined over the years will reunite in the kitchen for one unforgettable evening, joined by a special guest from South Africa.
Chef Dan Ashmore, once the mentor; Chef Tunde Abifarin, his former protégé; and Louis Boutinot, Export Manager for Waterkloof Estate and False Bay Vineyards, are coming together for a five-course Scottish–African tasting dinner at Kuba at Edinburgh Printmakers celebrating mentorship, friendship, and the enduring ties between Scottish and African cultures.
The tasting menu will showcase the vibrancy of African flavours harmonised with the soul of Scottish produce. Each course will be paired with some of South Africa’s finest wines, curated by Louis Boutinot, who brings the story and philosophy of Waterkloof Estate and False Bay Vineyards to the table. The wines reflect site-specific, minimal-intervention, organic and biodynamic winemaking, complementing the menu and celebrating African craftsmanship.
Tunde Abifarin is the chef-owner behind Tani Modi and Kuba at Edinburgh Printmakers, known for his bold fusion of African flavours with Scottish ingredients. In 2022, he was named Chef of the Year by Be Inclusive Hospitality, and his Abi’s African Chilli earned a Great Taste Award. Having trained under Dan Ashmore at The Balmoral, The Pompadour, and Gordon Ramsay’s Bread Street Kitchen, Tunde blends classical technique with storytelling, celebrating diversity, heritage, and the warmth of African hospitality in a Scottish setting.

Dan Ashmore is one of Scotland’s most respected chefs, currently Executive Chef at SCHLOSS Roxburghe, overseeing multiple outlets including fine dining, premium casual, and large-scale events. His career spans leadership at The Pompadour, The Strathearn at Gleneagles, and as Executive Head Chef at Gordon Ramsay Restaurants, launching Bread Street Kitchen Edinburgh. Dan has been named Fine Dining Chef of the Year at the Scottish Food Awards and is celebrated for his precise, creative, and modern approach to Scottish gastronomy.
Louis Boutinot is the Export Manager for Waterkloof Estate and False Bay Vineyards in South Africa. Part of a family legacy of winemaking, Louis promotes the estate’s philosophy of site-specific, minimal-intervention, organic and biodynamic wines, showcasing the unique terroirs of the Schapenberg hillside overlooking False Bay. His expertise brings an authentic African voice to the wine pairings, perfectly complementing the Scottish–African culinary dialogue of the evening.
“Dan showed me what excellence looked like in the kitchen. Coming back together for this dinner is like coming full circle, only this time as collaborators, not just mentor and student,”
— Tunde Abifarin
