Restaurant 1825 reopens at Colessio with refined new dining concept

The iconic Restaurant 1825 at Colessio has officially reopened, unveiling a refined new dining concept that signals a confident next chapter for one of the city’s most recognisable hospitality venues.

Operating as an independent restaurant while continuing to be managed by Colessio, Restaurant 1825 introduces a more focused, experience-led approach to dining in the heart of Stirling. The relaunch builds on its established reputation for exceptional Sunday lunches and indulgent afternoon teas, both of which will continue to be served seven days a week.

This spring, the restaurant will further elevate its offering with the introduction of an exclusive dinner service every Friday and Saturday evening. At the centre of this is a carefully curated five-course tasting menu, designed to celebrate the very best of Scotland’s larder, with a particular focus on produce from the Forth Valley. Dishes will showcase premium ingredients including Scottish salmon and venison, with menus evolving seasonally every two months to ensure a fresh and contemporary dining experience.

Limited to just 40 covers per sitting, the dinner experience has been intentionally designed to prioritise quality over volume. With no table turnaround, guests are invited to fully immerse themselves in a relaxed, unhurried setting. Advance booking is essential, with the option for exclusive use available for private parties, from intimate dinners to full venue hire.

Complementing the food offering is a premium wine programme, delivered in partnership with Bottega and Moët & Chandon. Guests can opt for a thoughtfully paired wine flight, featuring a selection of exclusive wines, including four labels curated in collaboration with renowned wine expert Gérard Bertrand. Both partners will work closely with the restaurant on branding and collaborative activations throughout the year.

The much-loved Sunday lunch offering remains a cornerstone of the Restaurant 1825 experience, with its signature roast beef continuing as a permanent fixture, alongside chicken and vegan options. Afternoon tea, another firm favourite, will also continue to provide a refined yet accessible daytime experience.

This relaunch positions Restaurant 1825 as a destination in its own right – one which blends heritage with modern Scottish dining, and delivers a more intimate, premium experience for both locals and visitors alike.
