Highland distillery Tomatin has launched a limited-edition single malt matured in a first-fill Pedro Ximénez sherry butt exclusively for specialist whisky retailers across the UK.
Distilled in 2011, Cask No. 37316 has been matured for 15 years and combines Tomatin’s soft, fruit-led character with the richness associated with Pedro Ximénez sherry casks.
The whisky offers aromas of candied orange peel, berry compote, honey and vanilla, followed by flavours of dark chocolate, sultanas and tarte tatin. Its finish is described as long and lingering, with notes of baking spices.
Sherry casks have played a role in Tomatin’s whisky-making for more than a century, with the distillery sourcing casks from Jerez throughout its history.
Jamie Muir, distillery manager at Tomatin, said: “Sherry casks are woven into the Tomatin story, and the flavours created in this whisky show exactly why we return to them time and time again.
“A first-fill Pedro Ximénez sherry butt is a bold cask to work with, and the lengthy maturation has drawn out real richness and depth in our spirit without masking the soft, fruit-led Highland character Tomatin is known for.
“Our first-class wood policy means every cask is looked after with genuine care, and having our own cooperage on site led by Allan is a big part of that.”
Tomatin is one of only four distilleries in Scotland to operate an in-house cooperage. Its cooper, Allan Bartlett, was named Cooper of the Year at the Icons of Whisky Awards 2025 in recognition of his work managing and maintaining the distillery’s cask stock.

Bottled at 58.8% ABV, the release is limited to 608 bottles and is presented in dark green packaging inspired by the Highland landscape surrounding the distillery.
The Tomatin 2011 Pedro Ximénez single cask is available from selected specialist whisky retailers across the UK from 29 September.
