A new culinary concept from one of Scotland’s most dynamic chefs has landed in Edinburgh, as BBC One’s Julie Lin unveils Tacos Lah at Bonnie & Wild, blending the vibrant food cultures of Malaysia and Mexico.
Launched at an exclusive VIP showcase, Tacos Lah is described as a celebration of flavour, memory and identity, reimagining Mexican street food through the lens of Lin’s Malaysian heritage. The result is a menu that feels both comforting and inventive, rooted in shared culinary traditions that span continents.
Lin, a regular on Saturday Kitchen, said the project reflects her lifelong connection to fusion cooking and cultural storytelling through food.
“I’ve grown up with fusion cuisine all of my life. Food makes me feel connected to a place,” she explained. “Despite Malaysia and Mexico being geographically miles apart, there are so many similarities in the way both countries approach flavour. The deep respect for dried chillies, acidity, smoke and punchy seasonings is incredibly inspiring as a chef.”
Rather than fusing cuisines for novelty, Tacos Lah focuses on the natural crossover between the two. Malaysian spice pastes, aromatic herbs and street food traditions sit comfortably alongside Mexico’s use of corn, chillies and regional techniques, creating a menu that is both playful and deeply considered.
Signature dishes include sambal pork tacos topped with pineapple salsa, slow-cooked lemongrass beef birria served with a richly spiced dipping broth, and a prawn tostada inspired by the nostalgic flavours of prawn toast. There is also a light-hearted nod to comfort food with salt-and-chilli potato smilies, underscoring Lin’s belief that bold flavours and fun can coexist.
“I’m deeply in love with my Malaysian roots, and this feels like a really exciting opportunity to explore the incredible range of ingredients found across Mexico and Malaysia and respectfully bring them together,” Lin added. “Tacos Lah is about finding common ground through food and creating something that tells a story – and brings a smile to people’s faces.”
