Witchmark Distillery, the award-winning B Corp-certified producer based on the historic Fonthill Estate in Wiltshire, has announced the release of its Witchmark Single Origin New Make Spirit: Distiller’s Cut.
Drawn from the distillery’s copper pot stills and bottled at 60% ABV, this limited first run of just 300 bottles offers whisky lovers the rare chance to experience the unadulterated character of Witchmark’s spirit before it begins its maturation journey.
Crafted entirely on-site from barley grown in the fields of the 9,000-acre Fonthill Estate and water drawn from the chalk aquifers beneath Wiltshire’s downs, Witchmark’s new make reflects the distillery’s grain-to-glass philosophy. Fermentation is slow and carefully temperature-controlled to preserve the depth and flavour of the malt, while generous cut points during distillation ensure a spirit that is light, fruity and elegantly smooth, designed to carry forward the essence of the raw ingredients as it ages.
On the nose, the new make spirit delivers fresh, clean malty notes. The palate is creamy and smooth, with warmth but no alcohol prickle, uplifted with gentle biscuit notes and hints of apple tart. The finish unfolds into a malty sweetness that lingers, a promise of complexity that future cask maturation will bring.
