A pioneering Scottish dairy has secured a major London distribution deal, potentially reaching thousands of customers and cafés across the capital, as demand grows for less processed alternatives to raw milk.
Doorstep delivery service Modern Milkman is rolling out slowly brewed, non-homogenised whole milk from Mossgiel Organic Dairy in response to rising customer demand driven by wellness trends, social media platforms like TikTok, and increasingly health-conscious consumers questioning how their food is produced.
While raw, unpasteurised milk cannot be widely sold in the UK due to the risk of harmful pathogens, Mossgiel’s ‘low and slow’ brewing process offers a fully compliant alternative – gently pasteurising milk at lower temperatures for longer periods to preserve its natural structure, flavour and cream, while meeting the highest food safety standards.
The move marks a significant step for the Ayrshire-based producer, opening up a major new market while building on growing interest in less processed dairy and could have a transformational impact on the Scottish dairy sector if demand continues at pace.
The family-run farm is already scaling to meet that demand. Mossgiel has increased capacity by more than 10% following the recent addition of three farms across the north of Scotland as direct milk suppliers, giving the business greater control over its milk pool as it expands beyond Scotland.
Mossgiel – where Scotland’s Bard Robert Burns once ploughed the fields – is Scotland’s only fully independent organic dairy of its kind.
The farm was the first UK dairy to eliminate single-use plastic from its supply chain, switching entirely to reusable glass bottles. Today, it supplies more than 250 cafés across Scotland and produces more than 1.5 million litres of organic milk each year.
Founder Bryce Cunningham, a former Mercedes engineer who returned to save the family farm following the ill health of his grandfather and father, said demand is being driven by people looking for milk that feels closer to its natural state.
He said: “Modern Milkman gives us access to a completely different scale of market. It opens the door to reaching thousands more households who are actively looking for better food systems – and it allows us to do that while staying true to everything we stand for.
“Today, what’s sold as ‘whole milk’ often isn’t what people think it is. It’s standardised, processed at scale, and stripped back before being rebuilt. That changes the flavour and the character of the product. Our low and slow brewing process does the opposite. It keeps the integrity of the milk intact.”
“We are seeing real curiosity around how food is produced. People want good, old-fashioned milk with minimal processing and maximum taste. We cannot sell raw milk widely in the UK, but brewed milk gives people something more natural and more sustainable, with real flavour, but still produced to the highest safety standards.”

Mossgiel milk is now available via home delivery to Modern Milkman customers in London and other parts of the UK, priced at £2.80 for a one litre glass bottle.
Mossgiel milk is also available across Scotland through an extensive retail network and home delivery services.
